Air Fryer Caribbean Chicken

The air fryer has recently been trending as a best seller amongst kitchen gadgets this year and I can certainly see why. It is a healthy alternative to traditional deep frying method and cooks in half the time.

This Caribbean chicken was cooked perfectly and done in just 20mins. A great recipe for midweek lunch or dinner.

Ingredients

6 chicken thighs

2 tbsp oil

1/3 cup greek yogurt

4 garlic cloves crushed

1 inch ginger grated

1/2 scotch bonnet pepper deseeded and finely chopped

2 tsp Dunns River dry jerk seasoning (contains salt)

1 tsp allspice (pimento) powder

1 tsp dried thyme

2 tsp browning

1/4 tsp salt or salt to taste

6 soft mini tortillas wraps

Method

1. Add all spices to the yogurt and mix well to form a paste.

2. Add oil to the chicken, stir well, then add the paste and incorporate well. Leave to marinate for 30mins.

3. Lightly grease your air fryer with oil.

4. Add chicken and cook at 180c for 20-25mins (follow the instructions on your air fryer).

5. Remove from air fryer, debone chicken and slice up.

6. Add chicken to a soft tortilla wrap, add your favourite fillings and enjoy!
