Garlic Herb Salmon Spaghetti
A simple but satisfying classic! This Garlic Herb Salmon Spaghetti is perfect for those busy week nights when saving time is essential.
Ingredients
2 skinless salmon fillets
3 cloves garlic, crushed
20g butter
1 tbs olive oil
Juice of half a lemon
salt
30g fresh parsley finely chopped
200g tenderstem broccoli
100g spaghetti
grated parmesan (optional)
Method
1. Season the salmon fillets with salt and pepper. Set aside.
2. Add pasta to a pot of boiling water, salt as required and cook for approximately 8-10 mins.
3. Whilst pasta is cooking, heat a nonstick frying pan over medium heat. Add a drizzle of olive oil and sear the salmon 3-4 mins each side until just cooked. Remove from pan and set aside.
4. Check pasta is almost cooked then add broccoli and cook for a further 5 mins. Drain, remove broccoli, and set both aside.
5. Retuning pan on a low heat, add the olive oil, butter, crushed garlic, parsley and lemon juice. Cook for a few minutes on until fragrant, being careful not to burn the garlic.
6. Add the cooked pasta to the pan and toss well in the sauce.
7. Plate up the pasta ,broccoli and salmon. Serve straight away.
Optional- add grated Parmesan for extra indulgence.
