Oven Roasted Jerk Pork

Slow cooked in the oven this easier version of jerk pork is beautifully aromatic and bursting with flavour. A versatile dish that keeps well and can be used in many ways.

Ingredients

1.3kg boneless pork shoulder

2 tsp white vinegar

1 tbsp browning

1 tbsp garlic powder

2 tbsp ground pimento

3 tbsp jerk paste (made own, but store bought works well too)

1 tbsp oil

Method

1. Cut pork into medium chunks keeping a bit of the top skin on each piece if possible.

2. Pour vinegar and browning onto meat and coat well.

3. Add garlic powder rub well.

4. In separate bowl, add jerk paste and ground pimento stir to combine.

5. Tip onto the meat and coat each piece well.

6. Leave to marinate overnight.

7. Remove pork from the refrigerator and allow to come to room temperature.

8. Preheat oven to 225 degrees Celsius.

9. Warm a dutch oven pot on the stovetop over medium to high heat then add oil.

10. Heat the oil for 1 min then add the meat and gently toss in the oil. Remove from heat.

11. Place pot in the oven and cook at 225c for 20 mins then turn down to 150c and cook for 1 hour.

12. Remove pot from oven after 1 hour and drain off liquid leaving pork in the pot.

13. Turn up oven to 225c and return pot to oven uncovered for 10 mins.

14. Remove and rest pork.

15. Enjoy hot with your choice of sides. Goes well with everything.
